You can choose whichever message list view you like: with or without displaying the senders' avatars and the beginning of the email's text.

To do this, tap the  "Menu" icon in the upper left corner of the screen, touch the  "Settings" icon at the bottom of the screen, and select the "Appearance" section. 

Note that these settings are not available in the iPad version.
